Ingredients
- 1 package of Outside the Breadbox Chocolate Chip Cookies
- 1 cup white chocolate chips
- 1-2 teaspoons of coconut oil
- ⅛ teaspoon of spirulina or green food coloring
Instructions
- In a small pot, melt the chocolate chips and coconut oil over low heat until combined.
- Take off heat and add spirulina or green food coloring and mix. Add more if you want a brighter green color.
- Dip cookies halfway into the white chocolate mixture. Let excess drip off and place on parchment paper to set. Enjoy!
Key Lime Mousse with Graham Cracker Crumbs
This Key Lime Mousse by Culibloom is another easy recipe with a citrus-y tang. Made with our gluten-free graham cracker crumbs, it’s a quick sweet treat that has all of the green elements needed for a St. Patrick’s Day party. Feel free to add some green food coloring, spirulina, or a four-leaf clover to give it that extra pop.
Ingredients
- ¾ cup Outside the Breadbox Graham Cracker Crumbs
- 1 ½ cups heavy whipping cream, chilled
- 1 teaspoon vanilla extract
- 1 cup sweetened condensed milk
- ⅓ cup lime juice
- 2 teaspoons gelatin
- 1 lime zested
Instructions
- Using a stand mixer, combine chilled heavy cream and vanilla extract. Beat on high speed until stiff peaks form, approximately 5-7 minutes.
- Remove the bowl from the mixer. Add the sweetened condensed milk and lime juice and gently fold in with a rubber spatula.
- Distribute the key lime mixture evenly among 4 glasses, and top each glass with graham cracker crumbs.
- Zest one lime and sprinkle it on top.
- Refrigerate the mousse for at least 3 hours or until it reaches a firm consistency.

Bright Spring Salad with Croutons
A salad is green, right? If you don’t have much of a sweet tooth, this Bright Spring Salad from Love and Lemons is a great way to give a nod to St. Patrick’s Day, without the sugar rush. The combinations of fresh vegetables and homemade dressing is light, refreshing, and you can make it your own! We replaced the pistachios with our gluten-free croutons to make it more allergen-friendly while also keeping a satisfying crunch.
Ingredients
- 1 bunch asparagus, tender parts, chopped into 1-inch pieces
- ½ cup frozen peas, thawed
- A few handfuls of salad greens
- 2 radishes, thinly sliced
- ½ cup crumbled feta cheese
- ½ avocado, pitted and diced
- ¼ cup Outside the Breadbox Croutons
- ½ cup roasted chickpeas
- Fresh herbs, for garnish (basil, mint and/or chives)
- Sea salt and freshly ground pepper
Dressing
- ¼ cup fresh basil leaves, or a mix of basil and mint leaves
- 1 small garlic clove
- 1 tablespoon fresh lemon juice
- ½ teaspoon lemon zest
- 1 tablespoon white wine vinegar
- 2 tablespoons extra-virgin olive oil, plus more as desired
- ¼ teaspoon sea salt
Instructions
- Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Blanch the asparagus for about 1 minute, or until tender but still bright green.
- Transfer to the ice water for 1 minute, then drain. Allow the asparagus to dry, transfer it back to the bowl, and add the peas.
- Make the dressing: In a food processor, pulse together the basil, garlic, lemon juice and zest, vinegar, olive oil, and salt. Season to taste, adding more oil as desired.
- Add half of the dressing to the bowl with the asparagus and toss to coat. Season to taste with salt and pepper.
- Assemble the salad. Arrange the salad greens on a platter, then layer the asparagus/pea mixture, the radishes, feta, avocado, croutons, chickpeas, and herbs on top. Drizzle with the remaining dressing, season to taste with more salt and pepper, and serve.
