Appetizer: Stuffed Mushrooms

Start the evening with a savory appetizer that’s sure to impress. These gluten-free stuffed mushrooms are packed with flavor and easy to prepare. And they’re made with our Vegan Oat Breadcrumbs! They’re the perfect start to a cozy dinner at home.

Ingredients

  • 12 large mushrooms
  • 1 cup of our Vegan Oat breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • ¼ cup olive oil
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 375 degrees fahrenheit
  2. Clean the mushrooms and remove the stems
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic, parsley, olive oil, salt, and pepper
  4. Stuff the mushroom caps with the breadcrumb mixture
  5. Place the mushrooms on a baking sheet and bake for 20 minutes or until golden brown

Main Course: Lemon Herb Grilled Chicken

For the main course, this lemon herb grilled chicken is both light and flavorful, making it a perfect gluten-free option. Whether you pair it with some grilled veggies or a tossed salad, you’ll be in love with this new date night favorite.

Ingredients

  • 4 boneless skinless chicken breasts
  • ¼ cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • salt and pepper to taste

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
