Plant-Based Southwest Burgers Recipe

Hatch chile season only comes but once a year, so we were inspired to make a plant-based brunch this weekend after we picked up some of these flavorful peppers at our local farmers market. We spiced up some plant-based burgers with taco seasoning and topped them with everything Southwestern we could think of: guacamole, jalapeño cream cheese, chipotle aioli, grilled onions, and of course the legendary Hatch peppers, then served them up on our very own Vegan Oat Hamburger Buns. Naturally you can mix-and-match your toppings to taste, but we believe in the more the merrier. We paired these delectable burgers with a veggie-rich fermented cucumber salad from @thewellnessremodel and oh boy did our taste buds rejoice! Scroll down to watch our step-by-step video.


Ingredients

1 lb ground makes 3-4 burgers

Guacamole

  • 1 medium avocado
  • 1 roma tomato, diced
  • 1 clove garlic, minced
  • Juice of one lime
  • Pinch of salt & pepper

Jalapeño Cream Cheese

  • 1/2 cup plant-based cream cheese (We used Miyoko's)
  • 1/2 jalapeño, seeded and minced

Chipotle Mayo

  • 2 Tbsp plant-based mayonnaise (We used Simple Truth)
  • 1 tsp diced chipotles in adobo sauce

Toppings

  • Roasted Hatch chile peppers
  • Grilled onions

Directions

Fire up the grill and start by making the toppings!

  1. In a small bowl, mash together the avocado, tomato, garlic, lime juice, salt, and pepper for the guacamole; set aside.
  2. In another small bowl, mix the cream cheese and diced jalapeño; set aside.
  3. In a third small bowl, fold the diced chipotles and mayo together; set aside.
  4. In a medium bowl, combine the plant-based ground, egg, bread crumbs, and taco seasoning.
  5. Hand-mix thoroughly and form into 3-4 patties, depending on how big a burger you would like!
  6. Put your onions on the grill.
  7. Grill your patties for about 3 minutes each side.
  8. When you're about one minute out, add your buns and Hatch peppers to the grill to toast/warm.
  9. Place your burgers on the buns and load with toppings.
  10. Enjoy!
