
We love planning ahead, and since breakfast is the most important meal of the day, this breakfast casserole from My Gluten-Free Kitchen is the perfect recipe to make the night before. Made with diced ham, shredded cheese, creamy eggs, and our fluffy Vegan Oat Bread. This easy recipe is a hearty and cheesy way to start your day off right. Not only is it easy to prepare, it’s delicious and a surefire way to make sure your kiddos get up on time. Who doesn’t love waking up to the smell of a freshly baked meal? Ingredients
- 6 cups cubed gluten-free white bread (like our Vegan Oat Bread, 1” cubes)
- 2 cups cubed pre-cooked ham (½” cubes), bacon, or breakfast sausage
- 2 cups shredded sharp cheddar cheese
- 5 eggs
- 2 cups milk
- ½ tsp ground mustard
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ¼ cup salted butter, melted
Instructions
- Lightly grease a 9×13 Pyrex glass baking dish.
- Mix cubed white bread and cubed ham in the baking dish and sprinkle with shredded cheese.
- In a bowl, beat the eggs, then mix in the milk, dry mustard, salt, pepper, and garlic powder. Pour it over the ham and bread mixture.
- Pour it over the ham and bread mixture, and then pour the melted butter on top.
- Cover and refrigerate overnight.
- In the morning, remove the casserole from the fridge and uncover. Let sit at room temperature while the oven preheats to 325°F.
- Once the oven is preheated, place the uncovered casserole in the oven and bake at 325°F for an hour.
- Once cooked, remove from the oven and let cool for 5 minutes before serving.
