Ingredients
- Outside The Breadbox gluten-free Hot Dog Buns
- turkey franks
- chili (see below)
- Miyoko’s pepper jack cheese
- Vegan mayo (optional)
- ketchup and/or mustard (optional)
- diced onions (optional)
Chili
- 1 lb ground turkey
- 1 zucchini
- 1 cup tomatoes
- 1 can kidney beans
- 1 can pinto beans
- 1 cup carrots
- 2 stalks celery
- 1 Tbsp FODY Foods Shallot Olive Oil
- 1 Tbsp FODY Foods Garlic Olive Oil
- 1/4 cup sweet corn
- 1 Tbsp cumin
- 1 Tbsp FODY Foods Taco Seasoning
- 1/2 cup tomato sauce
- 1/2 tsp black pepper
- 1/4 tsp sea salt
Directions
- Start with the chili, cooking al the vegetables down in FODY Foods flavored oils. Olive oil can also be used as a substitute.
- Add kdney and pinto beans
- Add ground turkey, spices, and tomato sauce and cook on medium heat
- Once the turkey is almost fully cooked, turn down to low heat and continue to simmer for 20 minutes
- While the chili is simmering, toast the hot dog buns and turkey franks on the grill or in the oven
- Spread a small amount of vegan mayo on each bun
- Add turkey frank and top with 2 Tbsp chili and 2 Tbsp vegan pepper jack cheese
- Top with condiments of your choice
- Enjoy!
